Orange Chicken, as popularized by Panda Express, was invented by Chef Andy Kao in 1987 at a Panda Express in Hawaii, adapting a Hunan Province dish with local flavors, but variations of citrus-flavored chicken existed in Chinese-American cuisine before then, inspired by sweet/sour dishes. Kao, a French-trained chef, created the iconic sweet, tangy, battered chicken version for the growing chain, evolving it from a spicier, bone-in dish to the American favorite known today.
